The owners of Corkbar have turned the wine-swirling, in-mouth-aerating, nose-in-glass culture on its head, inviting beginners and wine enthusiasts alike to an isolated corner of the EVO building to experience a less-intimidating and just-as-inebriating experience. And the food is right on par with the wine. A silky white bean puree comes with just enough truffle oil to transform it into something magical, while roasted bone marrow is slathered in a bright chimichurri sauce pungent from garlic. One of the best mains, tender root beer–braised short ribs is coated in a spicy-sweet glaze bordering on the addictive. Choosing the best vino to accompany your meal is a snap. The servers know their wine, and happily describe your options in words you can understand. And that’s what this warm, welcoming place does best: It refines the world of wine down into one tasty bite.
